On this Christmas Eve, Nick Gelso travels to Brookline for a Holiday tour of The Washington Square Tavern. This is a "return visit" of sorts, as Gelso visited with The Tavern back in November, talking with BNE2, Chef Barret about his POPUP dinner. The POPUP was a resounding success and today, we speak with the Tavern's Executive Chef Kevin Des Chenes. In addition to his work at this great Gastro Eatery, Chef Kevin has been making waves all over the Celebrity Chef circuit with his appearances on, Food Network's Chef Wanted with Anne Burrell and The Celebrity Stage at The Atlantic City Food & Wine Festival. Surrounding all of Kevin's recent success, is his great passion and devotion to charity. It's always been quite impactful to me that the culinary community always makes a priority to give back to those who are suffering or less fortunate. As you'll hear in today's episode of Beats and Eats, Kevin's current charity is one that is very close to mine and Ty's heart, Michelle's Place for Breast Cancer Research and Awareness. Our association coincides with Chef Kevin's via Gillian Larson, and her Reality Rally Charity weekend in Temecula, California. Chef Kev explains why charity is so important to him and why he's working so hard to raise funds for Reality Rally/Michelle's Place. Additionally, we speak about the Holiday Season at Washington Square Tavern in Brookline. Chef Kevin talks about the great things happening at the Tavern on Christmas Eve, Christmas Day and, of course, New Years Eve. Lastly, we spend a portion of time discussing the restaurant industry, the US Foods - Sysco merger, and how it will impact the independent operators, and general best practices in the BOH of a well-established, bustling Gastro Tavern in Boston. ![]() CLNS Radio & Beats and Eats hosted the Global Day of Discovery, in June. Emcee of the LIVE NBA Draft Party, to celebrate Day of Discovery at Marriott Renaissance. Renaissance and Stitcher hired Ty Ray and Nick Gelso to emcee their week-long festivities at their Waterfront Property, in the Seaport District of Boston. The festivities were a major success as Celtics fans filed in to the Renaissance Capice lounge by the dozens. What an interesting night, witnessing a variety of business travelers, tourists, corporate guests and sports fans, proudly dawning their Celtics jerseys. The event at Waterfront made it apparent that people love consuming podcasts, yet a sense of curiousity still exists in the production elements. The "virtual lounge" is open and today we are crossing over to our partner-network, CLNS Radio, for reactions from around the sports world on LeBron James' leaving the Miami Heat, to head back home to the Cleveland Cavaliers. Nick Gelso takes the lead on this podcast simulcast from the CLNS Radio airwaves. Over the course of the last 11 months, Beats & Eats has served as a 'playground' of sorts for Ty Ray and Nick Gelso to escape their lives as professional sports broadcasters. It is not usually on our weekly agenda to review any sports news, unless it strongly impacts the pop-culture, entertainment world.
Certainly, Friday's news that LeBron James was headed back to his home-team, the Cleveland Cavaliers, dominated CNN, ESPN, NBC, Good Morning America, The Today Show, Seth Myers and our good pal, Jimmy Fallon. Being Ty and Gelso are constantly responding to mailbag entries, requesting more information on our sports background, we felt it appropriate to expose the Beats & Eats audience to a taste of the coverage model at the frequently mentioned, CLNS Radio.
Though Ty Ray was off on assignment, you do get to hear Gelso, as he plays analyst, along side Boston Celtics Locker Room Reporter, Jared Weiss and, NBA Insider, Calvin Chamberlain.
This proved to be an amusing, and informative 90 minutes, as the CLNS Radio call-lines were FLOODED the entire time.

INGREDIENTS:
DIRECTIONS: While your flatbreads are grilling, peel and pit fresh peaches and cut in half. Brush with a bit of EVOO and sprinkle with a bit of salt & pepper. Grill on both sides until they develop grill marks. Remove peaches and flatbreads from grill and set aside. To crisp prosciutto, you can place aluminum foil on the hot grill and place slices on the foil, cover and grill until crisped, or you can bake in the oven until crisp. In a bowl, toss your arugula with a homemade balsamic vinaigrette. To assemble: Cut your flatbreads into quarters. Brush the top with just a bit of EVOO. Top with strips of the fresh mozzarella. Cut your peaches into smaller pieces and layer on top of mozzarella. Crumble the prosciutto a bit and layer on top of the peaches and then top with the arugula.

COOKBOOK #5: CHEF Godwin RECIPE:Extra Virgin Olive Oil Gelatto Ingredients
Directions Combine the egg yolks and sugar in the bowl of a heavy-duty mixer. Beat with the whisk attachment on medium speed until the mixture is thick and very pale in color and forms a ribbon when the whisk is lifted, about 5 minutes. With the mixer running, drizzle in the olive oil; beat for 2 more minutes. Add the milk and cream and continue to beat until all the ingredients are combined. Freeze the mixture in a gelato machine according to the manufacturer's instructions. |

COOKBOOK #5: CHEF BURMEISTER RECIPE:Download Chef Rob's recipe by clicking the "e" in botton right corner of app.
WAFFLE BATTER:
DIRECTIONS: Preheat waffle iron. Beat eggs in large bowl with hand beater until fluffy. Beat in flour, milk, vegetable oil, sugar, baking powder, salt and vanilla, just until smooth. Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Serve hot. BLOOMING FRIED CHICKEN
Put oil in a large cast iron skillet and heat to about 300 degrees. Re Fry the blooming onion a little so it becomes crispy. Let cool. In a food processor blend the onion until it’s a little crushed up. Put onion , ¾ cup flour, corn meal, salt, pepper, cayenne, and dried thyme In another bowl put ¼ cup flour. Pound out chicken thighs so they are about 1 inch thick. Salt and Pepper the chicken and dredge them in flour. Then dip back in egg milk mixture. . Now Put chicken in the onion, flour, corn meal mixture and make sure you roll it around so all parts of chicken are covered. You can even press it down a little. Put chicken in oil and fry on each side for about 3 minutes each side. If its smoking you can lower the heat. Take chicken out and put on a paper towel or brown paper to take the excess oil off. CINNAMON THYME HONEY
HEAT up honey with fresh thyme and cinnamon stick. Let sit for about 15 minutes. Serve warm waffle with chicken on top and drizzle with warm honey - Serves 4

Chef Chris Barcia and wife Beth gave Ty and I an opportunity to interview General Hospital legend, Kim McCullough. Beth and Chris own Palazzo 53 in the rejuvenated City of Pittston, PA. Palazzo 53 has become the anchor of a renaissance growth on Main Street, in Pittston PA. Several months back I had the privilege of interviewing Councilman Michael Lombardo about the rebirth of Main St. USA and he mentioned Palazzo as one of the keys to Pittston, becoming a model for other small cities in North East PA (NEPA).
